  • Alright...I do not have a degree in culinary arts,
    and I don't consider myself to be a chef (which is French for chief, BTW).
    So what makes ME qualified to have a site recommending my recipes?

  • Well, I have worked in two different restaurants (mostly as a food prep),
    but really I think of myself as an excellent cook of 'regular/everyday' meals.
    I accomplish this by always sticking to these essential rules:

    • I cook/prepare food that most people actually like,
      not food that most people have never heard of...
    • My food is healthy, fresh, easy to prepare, and above all--looks, smells, and tastes great!

  • I NEVER make substitutions:
    • If you are following any recipe, stick to it!
    • Don't substitute cheese(s) or bread(s) or spices just because that's all you have around...
    • If you are cooking something to use what you have leftover, that's a great thing!
      But find a recipe that calls for those ingredients, otherwise--go to the store!
    • I will go to two or even three different grocery stores if I know the meal I want to prepare
      requires ingredients such as sauce which only can be bought at the other store...
    • Not only will it taste better but your guests will appreciate the difference!
      (They will only notice when you don't follow these basic instructions...)

  • I cook everything thoroughly and evenly:
    • I don't like rare meat that is pink and bloody, crunchy pasta, or soggy eggs, but I don't like burnt meat, soggy noodles or dry eggs either...

  • I don't abandon my kitchen:
    • That's right--if it's food, and you 'hunted' for it at 3 stores, then claim your space!
    • Too many people walk away from the meal while it cooks which indicates
      it is probably all out of a package and goes into a microwave.
    • So, if you're going to cook--then cook!
    • If something is baking in an oven, stick around to check on it,
      or at least get started on some side dishes, set the table,
      get drinks & condiments ready...etc.

  • I keep a clean kitchen:
    • So, clean up while you cook, try to limit the number of utensils, pots, pans, etc.

  • Above all, put love into your food...
    • ...be thankful that you have any!
    • And by that I mean even power to your fridge or running water...
    • ...So, take advantage and the more care and time you put into it, the better it will be!
