Breakfast Tacos

  • About...
  • Believe it or not, but the breakfast taco is native to Alamo City (San Antonio, TX)!

  • This is not to be confused with a breakfast burrito...

  • Okay, I first visited San Antonio in December of '03 (and moved here in July of '07).

  • When the locals told me about breakfast tacos I thought,
    "Who wants a hard-shell taco first thing in the morning?!"

  • Steamed and filled with scrambled eggs, potatoes, cilantro, sausage, and/or bacon,
    I love these similar to the way I relish cheesesteaks from the Philly area...

  • In fact, I used to get most of my Philly cheesesteaks off of a truck at Rutgers University
    (when I lived in New Jersey...)

  • Now, instead of ice cream trucks in the San Antonio area playing Scott Joplin's
    famous ragtime The Entertainer, there are plenty of children from the
    neighborhood that come out when a local taco truck drives around playing
    The Mexican Hat Dance!


  • Ingredients:
  • 1 package (20) of fresh, flour tortillas...taquito size!

  • 6 large or jumbo-sized grade-A or better eggs

  • A bundle of cilantro

    Cilantro

  • 1 bottle of Tobasco® sauce

    Tobasco sauce

  • 1 bag of Ore-Ida® Potatoes O'Brien style

  • 1 box of Jimmy Dean® breakfast sausage links (Not hot or maple flavor)

  • 1 box of Jimmy Dean® Fully-cooked Hickory Smoked bacon

  • Pam® vegetable non-stick cooking spray and some vegetable (soybean) oil

  • 1 carton of Dole® Aguas Frescas

  • This recipe is enough for 2 people to EACH have:
    1 potato & egg taco, 1 bacon & egg taco, and 1 sausage & egg taco.


  • Preparation:

  • In a large pot, heat 1/3 cup of vegetable oil
    and place the entire bag of the Ore-Ida® Potatoes O'Brien...
    With a spatula, try to break the clumps,
    and put the lid on with the heat set to medium-low...

  • Now, thoroughly rinse the bundle of cilantro using a spray hose from your sink
    (if you have one), shake off excess water,
    and place on the counter next to a small bowl (that has a lid for later storage).

  • One by one, pinch off the top of each piece of cilantro
    (as the entire stems should be thrown away) and place the tops in the bowl
    (this bowl can be used for serving and for refrigerating whatever is leftover).

  • Don't forget to stir the potatoes in the pot as you do this...
    This process alone can take at least 20 minutes!

  • Obviously, whatever potatoes are not used can be refrigerated for use later...
    Only you won't have to prepare them or the cilantro!

  • Crack the eggs into a small bowl and,
    (be sure to wash your hands immediately after doing so)
    with a small whisk or fork, stir well...
    get out a pan and spray it with the Pam® non-stick vegetable spray.

  • Use a paper towel to place 4 strips of the Jimmy Dean® pre-cooked bacon on it,
    spread apart with another paper towel covering it...

  • Use another paper towel and place 4 of the Jimmy Dean® breakfast sausage links,
    and using a fork, cut each link in half...
    and then cut each half in half again to make quarters or a total of 16 bits of sausage...
    Fold the paper towel both over and under (tuck it) to prepare these to go into the microwave...

  • Next, I like to eat my breakfast tacos one at a time, so...
    For each tortilla, place on a small plate and lightly sprinkle it with filtered water
    (I use the water dispenser from my fridge), place in the microwave...
    This will keep the tortillas soft and moist!

  • Do not cook anything in the microwave yet!
    We have not yet cooked the eggs, so,
    Stir the potatoes one more time and turn the heat down to low,
    and turn the pan with the Pam® vegetable spray in it on medium high.

  • Now add the eggs to the pan and with another spatula, scramble the eggs...
    When the eggs are solidified turn off the burner and remove from heat...
    Don't forget to turn off the burner to the potatoes and stir them one last time!

  • The tortilla can be microwaved for about 20 seconds
    (high watt) or 15 seconds (low watt), t
    The bacon and the sausage take just 20 seconds on high in the microwave...

  • For each taco, use approx. 1 egg:
    In this case, about 1/3 of the scrambled eggs as I cooked only 3 eggs per taco,
    then add plenty of cilantro (you can NEVER have too much cilantro!)

  • Try one taco with bacon, another with the sausage, and the other with potatoes...
    Top with plenty of Tobasco® sauce,
    Serve with a glass of the Aguas Frescas and enjoy the fiesta!
